Taste note by Mr Bear: This roasted pumpkin and ginger swirl ice cream is made from a spiced ice cream. Spiced with ginger, cinnamon and a little clove. Very warming & soothing. The pumpkins are crown prince pumpkins that have a good strong flesh and like a roast.
Once nice and soft they are puréed, and cooked down to remove more moisture. Egg yolks and sugar are added and is cooked in a similar way to pumpkin pie. This is then chilled and swirled through the ice cream with ginger biscuit crumbs.
It’s a happy mix of warming ginger and winter spices, thick luxurious pumpkin and crunchy ginger biscuit crumb.
