In October, just before we launched our Christmas menu, we teamed up with an amazing crowd of incredible testers, who received our Christmas Taster Bundle with 6 little tubs of Joy. We asked them to try & test and report back on their findings. Our tasting team, ranging from Food Editors, Bloggers, Instagrammers, Food Photographers, Chefs and some Food Product Developers extraordinaire, went through all the flavours in their own specific ways. It was truly awesome and finger licking to see all their reviews of our 6 new festive tubs of Joy.
The boss lady behind the amazing instagram account @letsget.em totally got us with her post on pairing up our Mince Pie ice cream with her own homemade gooey cinnamon buns! Her instagram post made us drool so much, we couldn't resist asking her for the recipe and testing it out. Thank you so much @letsget.em for being so generous and sharing your recipe with us. Tried & tested .. here we go! Start shopping, get those ingredients in and start baking these amazing golden brown gooey beauties. These Buns paired up with generous scoops of Bears Joy totally have the seal of approval of Mr Bear himself too.
Cinnamon Buns by @letsget.em
Makes: 8-10 buns
Prep time: 30 mins (+ 1hr 50 mins rising)
Bake time: 15-18 mins
What you need:
- 260g Self Raising Flour
- 2 tbsp Caster Sugar
- 95g Unsalted Butter
- 200ml Milk
- Pinch of Salt
- 3g Dried Yeast
- 50g Brown Sugar
- 1 tsp Cinnamon
- 120g Icing Sugar
- 1/2 tsp Vanilla Essence
How to prepare:
- Put the flour, caster sugar, salt & yeast in a bowl with 50g soft butter. Rub together for 5 minutes until there are no lumps within the mixture.
- Heat 165ml milk on the hob until warm. Combine with the mixture of flour & mix until a dough has formed.
- Knead for 5 minutes until smooth.
- Put the dough in a clean bowl, cover with cling film & leave in a warm place for 90 minutes to double in size.
- Once the dough has risen, roll it out into a 40cm x 25cm rectangle.
- Spread 30g of soft butter evenly across the dough.
- Combine the brown sugar & cinnamon, removing any lumps, then sprinkle an even layer across the buttered dough.
- Roll the dough up lengthways & cut into slices. At this stage you can decide how many buns you wish to make – 10 smaller buns or 8 slightly larger buns.
- Place the buns into their tin (I sprinkle any left-over brown sugar onto the top of the buns at this stage for that extra sweet touch).
- Cover with cling film & leave in a warm place for a further 20-30 minutes.
- Preheat the oven to 180 degrees (160 fan) or Gas Mark 4.
- Once the buns have finished proving, brush the top of them with 20ml milk.
- The most exciting part…BAKE for 15-18 minutes until the buns are golden brown.
- Whilst the buns are in the oven, mix 15g of soft butter with the icing sugar, adding a dash of milk should you need a creamier consistency for your icing. Vanilla essence also adds a lovely flavour.
- Once out of the oven, spread your icing all over the buns. It is essential to complete this stage whilst the buns are still warm as the icing goes on really smoothly. You may wish to drizzle only a little, but I love to spread a thick, creamy layer…YUM!
- Serve with a scoop of Bears Ice Cream & a sprinkle of festivity for the ultimate cosy sweet treat. The Mince Pie pairs up beautifully with the warm gooey buns since its made with a spiced ice cream.
